Smoked Cheddar And Jalapeno Bacon Meatloaf

1 1/2 pounds premium ground beef
1/2 pound ground pork
3 eggs
1 cup bread crumbs
1/4 cup diced jalapenos
1 Tbsp. Worcestershire sauce
1 tsp. freshly ground black pepper
2 tsp. Grill Mates - Montreal Steak Seasoning
1/3 cup chopped cilantro
1 Tbsp. Mexican oregano
3/4 cup shredded smoked cheddar cheese
1 cup diced onion

For topping:
4 slices uncooked bacon
1/4 cup ketchup

Mix all the ingredients except the ketchup and bacon in a large mixing bowl. Place into a loaf pan or a round pie plate. Spread ketchup over the meat and lay the bacon on the top. Bake in 350 oven or a Dutch oven for 1 hour.

Canyon Queso

2 Lbs Hot Italian Sausage
16oz Velveeta cubed
8oz Sharp Cheddar Cheese cubed
8oz Pepper Jack Cheese cubed
8oz Cream Cheese cubed
8oz Sour Cream
8oz Cottage Cheese
10oz Hot Rotel
1/2 cup Pickeled Jalepeno
Hot sauce to taste

Add all to crockpot, cook on low until completely melted. Serve with tortilla chips!

Potato Pancakes

1/2 cup Bisquick Mix
1/2 cup Milk (I use a little less Milk)
1 Tsp Salt (I don't salt my cooking, but I suppose one could to taste, not recommended)
3 Eggs (I seperate two of the eggs, disgarding the yolk)
3 cups Finely Shredded Uncooked Potatoes
Garlic (I add garlic to taste)
Marjoram ( Just a tiny bit, I mean a wisp)

1. In a large bowl mix Bisquick, milk, marjoram, salt, and eggs until blended. Then add potatoes.
-I put a little olive oil in the griddle before heating

2. Heat griddle or skillet over medium heat or to 375 degrees.
- To test griddle, sprinkle with a few drops of water. If bubbles and jumps around, heat is just right.)

3. Vigorously stir in garlic right before putting batter on griddle

4. For each pancake, pour slightly less than 1/4 cup batter onto griddle, spreading each slightly to make a 4-inch pancake. Cook until dry and crispy around edges. Turn and cook other side until golden brown.

-Some people have applesauce with them, but I like my potato pancakes simple and pure without any distractions.

Green Chili Pork Loin Roast

1 5 LB. Pork loin boneless roast.
7 to 10 Russets or Yukon Gold potatoes cut in quarters.
1 LB. Bag of carrots, about 3 inch pieces.
1 Large can of green chili’s, diced or 1 medium jar of green chili salsa( no tomitillas, they have seeds).
2 Sweet (or yellow) onions, slivered.
A nice bunch of cilantro, tied into a bouquet garnish Just means tied with some light cotton string so it removes easily.
Cumin
Salt and pepper
Chili powder
Worchester sauce
Oil

   Season the roast with salt, pepper and chili powder. Sear it with your favorite oil; I like a good EVOO and some Worchester sauce. Get a good sear, all over, especially if you put this in a slow roaster. Add the vegetables, cumin, cilantro and the chili, which ever you decided to use. Add 2 cups water, salt and pepper, cover and roast at 350 for about 3 hours. If you are crocking it go 5 to 6 hours 3 on high (check with a thermometer, should be at least 165 degrees). Remove roast and LET REST for 10 to 15 minutes. Also remove the cilantro and discard. Remove the vegetables, and thicken sauce from a juice to gravy (leave the chili’s and the slivered onions in). If you want to puree the gravy, go for it. I like it rustic.

Pizza at Talladega

1 8oz can of Tomato Sauce
1 bag Boboli 12-inch Prebaked Pizza Crust.
1 bag of Pepperoni
1 2.25oz can of Black Olives

Fire up the grill to medium heat. Spread sauce on pizza crust, top evenly with cheese, pepperoni and black olives.
Place on grill and close cover. Cook for 10 minutes, rotating as needed to cook evenly.

Makes 4 Servings
